Peach Cobbler - Marlene

Ingredients

Dough batter
1 C Sifted all-purpose flour
2 TBLS sugar
1 - 1/2 tsp baking powder
1/4 tsp salt
1/4 C butter
1/4 C Milk
1 beaten egg

Dough Preparation

  1. Sift together the flour, sugar, baking powder and salt
  2. Cut in butter till mixutre resembles coarse crumbs
  3. combine milk & beaten egg
  4. Add to dry mixture and stir just to moisten

 

Peach sauce
1 - 1/2 TBLS cornstarch
1/4 to 1/2 tsp cinnamon
dash nutmeg
dash salt
1/2 C brown sugar
1/2 C water
   
4 C (or 2 lbs) Peaches (Sliced)
1 TBLS lemon juice
1 TBLS butter
1/4 tsp almond flavoring

Cobbler Preparation

  1. Combine cornstarch, cinnamon, nutmeg, salt and brown sugar in the water in a saucepan.
  2. Cook and stir till thickened
  3. Add 4 cups of sliced peaches, lemon juice & butter
  4. Cook till peaches are hot (5 minutes)
  5. Stir in almond flavoring

  6. Pour filling into 8-1/4 x 1-34-inch round baking dish
  7. Immediately spoon on biscuit topper in 6 mounds.
  8. Bake at 400 degrees for 20 to 25 minutes.
